Easy to see how people made paper and skins for boats out of this stuff. The interesting question is, what evolutionary or functional value does it have for the tree?

I found another interesting link about the construction of the birch bark canoe:

This is a great picture! Canoes were (and are) made out of bigger and thicker pieces of birch bark, though – as far as I know.
You can learn to build your own birch bark canoe:

– quote –
Prepare to get dirty, tired, smell like smoke and generally feel great! Gain the skill and certainty needed to build your own birchbark canoe. It’s not enough to “know about”. To really “know” it requires that you “do”. Once you acquire the skill you will have certainty and confidence.

This sounds the right thing for you – and a lake for the test drive is available as well. ;)
